Fortunately, in recent years, mousse-like desserts and cakes have become more and more popular in Hungary. But what exactly is a sweet mousse and what makes these sweet poems so light and airy?
What is a mousse cake, the origins of mousse
It is true that this type of dessert has only become very well known, popular and widespread in our country in the last ten years or so, but who would have thought that in France, lightly textured mousse, which was called mousse in French, was already being made in the 18th century. So mousse is the light, airy texture of the mousse, which can be used to make a wide variety of desserts. Its first messenger was certainly the chocolate mousse (mousse au chocolat), which still enjoys incredible popularity around the world. From then on, there was no stopping it, as more and more versions of mousse were created by combining ingredients such as fruit or even vanilla, not to mention the fact that the number of variations is almost endless due to the ingredients used.
What is mousse made of
Anyone who has ever tasted a mousse dessert or cake would think how difficult it can be to make such a light and really extra airy mousse. This was indeed true in the 18th century, but with advances in technology and the advent of high-speed mechanical mixers, the task has been greatly simplified. Moreover, this technical innovation has brought with it another major advantage, namely that whipped mousse retains its characteristic consistency for much longer.
But what is a mousse made of? It is extremely simple, with only three mandatory ingredients: egg whites, chocolate and a minimum of sugar. However, there are several schools of thought on how to make it, depending on, for example, the order and timing of the ingredients. Of course, there are also improved recipes that use egg yolks or cream, or even butter, but the traditional and easiest version is clearly made with egg whites, chocolate and sugar.
A brief look at
As mentioned above, the advent of professional mixers has opened up a whole new dimension in this segment of gastronomy, and it was French cuisine that first started to experiment with salt-based mousse, in addition to the traditional sweet mousse versions. The idea was so successful that it led to the creation of cheese mousse, meat pâté mousse, vegetable mousse made from pureed vegetables and many other savoury mousse versions.
